Grains

Millet - This millet recipe is great for breakfast

3 cups water

1 cup millet

¼ cup raw or organic pumpkin seeds

¼ cup raw or organic sunflower seeds

2 tsp cinnamon

1 tsp chopped walnuts

Boil water on high to medium.

Add millet, stir occasionally uncovered until water is absorbed approximately 20 mins.

Add the pumpkin seeds and sunflower seeds.

Stir occasionally. (You can also add these after the millet is ready).

If the millet appears to sticky, add a little almond or coconut milk.

Place in bowl, sprinkle cinnamon and walnuts on top and add your favourite fruit, banana, blueberries, raspberries or strawberries all work great.

Serves 4.

If making for one person, store the remainders in the fridge in a glass sealed container and re-heat in the morning, again adding a bit of almond or coconut milk for better texture.
