Energy Protein Peanut Butter Balls

5 tbsp organic peanut butter

1 tbsp coconut oil

2 tbsp brown rice protein

3 tbsp puffed quinoa

2 tsp coconut sugar

½ teaspoon organic vanilla

Combine peanut butter, coconut oil, coconut sugar and vanilla in a pot and melt at a low temperature.

Add the rice protein and puffed quinoa to the mixture.

Mix well. Place in the fridge for 15 mins and roll into balls.

Makes about 7
